釀造：
葡萄完熟時採收，去梗，然後輕輕壓碎。浸漬持續15日至三星期，並根據特定的葡萄品種，在不同溫度的大缸發酵，於木桶陳年6至12個月。

Premius is the prestige range of Yvon Mau, one of the leading players in Bordeaux, which has acquired unique expertise in making Bordeaux wines since its inception in 1897. Yvon Mau became a subsidiary of the Spanish Freixenet group since 2001, the company is now part of the German Henkell Freixenet group, the world leader in sparkling wines.
Over the years, they have built close relationships with a large number of growers in Bordeaux. In addition to the respect of environment and the crafting techniques, Premius has inherited the full elegance of Bordeaux and carefully blended in line with specifications. Although there is no chateau or big family story to tell, Premius is a real Bordeaux which is uncomplicated, friendly and accessible.

Vinification:
The grapes are harvested when perfectly ripe, destemmed and lightly crushed. Maceration lasts from 15 days to 3 weeks and is carried out by controlling the temperatures adapted to the type of grape harvested in different vats. Pouring is decided after control tasting when taste balance is achieved. Aging continues in barrels for 6 to 12 months.
Tasting Notes:
Beautiful raspberry color with purple highlights. The nose is fine and powerful, combining black berries and roasted notes. On the palate, the maturity of the grapes is highlighted by a beautiful balance and a fresh touch of red fruits. The woody notes are melted and bring complexity to the long finish, with toasted accents.
Pairing:
Ideal as an aperitif, this wine will go wonderfully with red meats and cheese platters.
