Chateau Gilbert & Gaillard的誕生,有賴兩位葡萄酒發燒友,兼著名酒評家Francois Gilbert及Philippe Gaillard的努力。兩人自1991年起,出版了行銷五大洲的Gilbert & Gaillard雜誌,將他們的酒評及葡萄酒知識與酒迷分享。多年來走訪世界各地的經驗、累積的專業知識,以及對葡萄酒的熱誠,促使他們於南法的Saint-Chinian及Languedoc成立了Chateau Gilbert & Gaillard。
Gilbert作為釀酒家族之子,而Gaillard作為主力研究釀酒風土的地理學博士,兩人都對大自然尤其尊重。他們的釀酒哲學,就是希望將南部產區Chinian,以石灰岩為主的獨特風土,帶到飲家的酒杯中,並原原本本的將葡萄酒中的清新、細緻與優雅表達出來。
影片中,Francois Gilbert 展示了酒莊的特色及其地質組成,從中可以了解到Saint-Chinian產區以南200米的風土特色。酒莊面積達16公頃,葡萄樹齡最少有25年,主要以Syrah為主。而他們最具代表性的混釀,結構複雜而具層次感。Chateau Gilbert & Gaillard 的出品充滿礦物感、叢林感覺、香料及甜美的紅果味,並有著接近完美的平衡及清新感。

Chateau Gilbert & Gaillard was born from the efforts of two wine enthusiasts and wine critics, Francois Gilbert and Philippe Gaillard. In 1991, they started publishing wine magazine Gilbert & Gaillard to share their wine critics and knowledge with wine lovers. The magazine is now available on 5 continents. Their years of experiences of travelling around the world and the professional knowledge of wine, as well as their passion for wine help them establish Chateau Gilbert & Gaillard in Saint-Chinian and Languedoc. Gilbert, as the son of the winemaker’s family, and Gaillard, as a doctor in Geography who specializes in the study of wine terroirs, accentuate the importance of nature. The winemaking philosophy of the Chateau is to transcribe the terroir of Chinian to the consumer, from the vine to the glass, keeping all these features namely, the freshness, the finesse and elegance.
In the video, François Gilbert presents its features and the milestones of geological formation. Although the video is in French, you can still have a glimpse on this exceptional Terroir 200 metres south of the Saint-Chinian appellation. It is a 16 hectares winery, the vines are at least 25 years old, mainly composed of Syrah, their signature Chateau blend is more complex and structured. Their wines are full of mineral structure, plenty of garrigues and nice spices with delicious red fruits, it has a seamless balance of freshness and elegance.

Vinification:
The grapes are destemmed and sorted manually on belts then placed in vats. Vatting lasts approximately 3 weeks, characterized by gentle extraction developing aromatic complexity. 40% of the juice is aged in barrels between 12 and 18 months.

A slightly gamey nose of Mediterranean herbs, mushrooms, tree bark and black earth. Fresh, medium-bodied palate turns fruity and glycerol with fine, silky tannins. Balanced with a juicy center-palate and a flavorful finish.

Meat in sauce, spicy cuisine but also delicate and refined dishes.
