Les Parcellaires de Saulx於2017年在Meursault創立,選址於一間百年酒莊。他們與優秀的葡萄農合作,從單一地塊中挑選最好的葡萄(因此取名“Parcellaires”),不會作出混調。
葡萄園大多採用有機及生物動力農法,以表現出真正的風土。
酒莊的出品來自30個享負盛名的產區,由美好之丘(Cote de Beaune)到夜丘(Cote de Nuits),由村級酒至特級園。產量極為有限,每個地塊只出產600-1,200支葡萄酒。

Les Parcellaires de Saulx was created in 2017 in Meursault, on the foundations of a century-old house of wine located in the same premises. The wines are made in collaboration with some of the finest growers.
They select the best grapes and only from single parcels (hence the name "Parcellaires") without blending. The growers practice organic and biodynamic approach in order to produce the truest expression of terroir.
The Domaine sells around 30 appellations produced on the most prestigious terroirs of Burgundy, from Côte de Beaune to Côte de Nuits, from village appellations to grands crus.
Production is extremely limited, wine/parcel (equal to 600-1,200 bottles).

Terroir:
The old vines coming from the northern slopes of the appellation which are based on clay-limestone soils rich in iron oxides.

Vinification:
Ferment in large wooden vessels, having malolactic conversion, and mature in oaks barrels for 12-15 months.

Tasting note:
Bright garnet color. Intense nose (blackcurrant, redcurrant, morello cherry), accompanied by subtle hints of violets and spices. Clean on the palate, with a nice acidulous roundness. The structure is elegant with silky tannins. The finish is long and spicy.
