The wine is made with a rigorous harvest in two stages: one early harvest and one late harvest. The first one will give freshness to the wine and the second one more structure and complexity to it. Fermentation starts in stainless steel tanks and it is followed by a 4 months aging on 500 litres new French oak barrels.

There is one white produced with Macabeo grapes, the 2021 Serres Velles Macabeu, which felt very young. Perfumed and intense nose of stone fruits and spices like ginger. It's spicy, creamy and generously oaked, with only 11% alcohol and a pH of 3.25. A chalky profile on the palate disclosing a minerality that gives it a fresh finish. 6,332 bottles were filled in April 2022.
