Domaine William Fevre是Chablis其中一家非常重要的酒莊,所擁有的Grand Cru(特級園),在區內數一數二。1959 年標誌著 William Fèvre 的第一次收成,此後一直由家族經營,直至1998年由Henriot 集團收購。
Didier Séguier作為首席釀酒師,之前曾於 Bouchard Père & Fils 擔任副手,累積了豐富的經驗,把當時非常橡木風格的Chablis,扭轉為更着重風土。簡單來說,出品更富有Chablis的地方色彩。

2018 年份的 Chablis Village散發迷人的青蘋果和石灰石粒的香氣。口感清新、充滿活力、酸度清脆,以村酒來說,擁有良好的持久性。

The Domaine William Fèvre, the largest owner of Grands Crus in Chablis.  1959 marked the first harvest of William Fèvre, owner of the domain of the same name until 1998 as it was acquired by Henriot group.
Head winemaker of Domaine William Fevre, Didier Séguier, worked as assistant winemaker at Bouchard Père & Fils, so he already had experience under his belt, steering what was then a very oaky style of Chablis to one that was much more terroir driven and for want of a better word, just more "Chablis."

Vinification:
Manual harvest. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally.  Maturation for 8 to 10 months in stainless steel vats to preserve freshness.

Tasting Notes:
The 2018 Chablis Village has an attractive bouquet of gently unfolding green apple and crushed limestone scents. The palate is fresh and vibrant with crisp acidity, and quite critic toward the finish, which shows good persistence for a Village Cru.

Food Pairing:
Fish dishes, grilled or in a light sauce; various seafood, oysters and sushi.
