Dominio do Bibei 是位於 Ribeira Sacra D.O 分支產區 Quiroga-Bibei,像所有Ribeira Sacra 分支產區一樣,此地區擁有令人歎為觀止的山脈和河流,但比其他分支產區面積較小和乾旱。 Javier Domínguez 就是這個葡萄園的操作者。

在那些梯田上種有 Mencía、Garnacha、Brancellao 和 Mouratón,新田地透過開墾和使用上述品種的老樹而設立,其餘白葡萄品種包括 Doña Blanca、Godello 和 Albariño。這些田地擁有不同面向和土壤種類,因為這裡是接觸 Valdeorras 之處,所以山區的土壤包括頁岩、花崗岩和粘土。

釀造:
葡萄由人手用10kg箱子收成,並以攝氏兩度溫度保存72小時。其後再以人手挑選,於酒莊內直接壓搾。於缸內以低溫自然發酵12小時。發酵於600L的法國橡木桶。發酵溫度低而且有部分為乳酸發酵。

陳年:
於1至3年的法國橡木桶與酒渣一同陳年9個月。於foudre放置4個月,混凝土缸(egg)中7個月。沒有淨化、過濾和穩定化。飲用時或者看到少許沉澱,上市前會經過瓶內陳年18個月。 

品酒筆記:
香氣帶有海洋感覺,帶一點鹹香及十分高質素的橡木融合,少許煙燻和檸檬皮。果香豐富、多汁,非常充實。它有些像布根地酒的風格,有新鮮度,有質感和深度,非同凡響。

Dominio do Bibei is located in the Quiroga-Bibei sub-zone of the Ribeira Sacra D.O. Like all Ribeira Sacra sub-zones, this area is one of spectacular mountain ranges and flowing rivers, but it is drier and harsher than the other sub-zones. Javier Domínguez is the author of this crazy adventure to recapture a once grand vineyard. 

Planted on these terraces are old vines of Mencía, Garnacha, Brancellao and Mouratón. New plots are being planted using cuttings from these old vines so as to maintain clonal diversity in the vineyard. In addition to the red varietals, there are plantings of white grape varietals such as Doña Blanca, Godello and Albariño (the cuttings of this last grape being from Do Ferreiro). The sites vary greatly based on the orientation of the plots and the soil types. Because this is a transition zone which touches Valdeorras, soils of slate, granite and clay are interspersed among the hillsides.

Vinification:
Grapes were hand harvested using crates of 10 kg capacity. Kept in the winery at 2C for 72 hours. The grapes were hand sorted in the vineyard, in the winery and then directly pressed. Natural clarification in tank at low temperature for 12 hours. Fermentation in 600L French oak barrels. Low fermentation temperatures and partial malolactic. 

Ageing:
On the lees in 600L French 1 to 3 years oak barrels for 9 months. In "foudre" for 4 months. In concrete tank type "egg" for 7 months. No clarification, filtration or stabilisation. Some solid residue maybe encountered in the wine. Bottle ageing was 18 months prior releasing.

Tasting Notes:
The nose is marine, with a salty sensation and very good oak integration, a touch of smoke and hints of lemon peel. It has lots of fruits and concentration, fluid but very well filled. It has burgundy-like tasting profile. Although it shows palpable oak,it can be overlooked since there is presence of stony character, the freshness, the volume, the depth and its succulence are beyond doubt extraordinary.
